Creamy Chickpea Flour Peanut Butter Maple Fudge

It seems each time a try a different approach to vegan-friendly fudge, I declare that a new favorite has been born. I used to think dairy was pretty essential to a rich and decadent fudge, but I’ve since discovered otherwise. In fact, this chickpea flour fudge is reminiscent of maple fudge — the richness comes from the addition of coconut butter and oil and the maple syrup. However, it’s nearly guilt-free, because everything in there is good for you and more forgiving to your waistline. You really only need a small piece to satisfy that craving for the richness that sometimes only a piece of fudge will satisfy. Creamy Chickpea ...

Creamy Peanut Butter Chickpea & Squash Curry

Though I embrace nearly every legume with open arms and a hungry tummy, my pantry being a concrete overflowing testament to that statement, if I absolutely had to choose a favorite, say a desert island essential, I would say buttery soft, plump, and infinitely versatile chickpeas are always a consideration when it comes to meal planning. Spice them up, mash them up, make them into hummus, little bites, even desserts, one of my latest experiments was a fusion-style dish that also features peanut butter for extra protein and legume goodness. If you haven’t used peanut butter in a savory dish before, you are missing out. The texture, creaminess and protein ...

Chickpea, Spinach and Beets in a Coconut-Tomato Curry

Combining plump buttery chickpeas with spinach and beets in a creamy coconut milk and tomato gravy with aromatic spices not only puts plenty of flavor on the plate, but also provides for a complete, filling and wonderfully nourishing meal served with fresh cooked white or brown rice or a flat bread. And with curry powder and panch phoran spice blends made up ahead of time, it comes together in no time at all. Panch phoran, also known as Bengali five-spice, is a deliciously fragrant spice blend consisting of equal parts fenugreek, nigella, black mustard, cumin and fennel seeds. Vegan Chickpea Flour Omelette with Vegetables

I don’t much fuss with breakfast during the week, but on the weekends when there is more time and two of us to sit down for a nice brunch, usually something a little fancier than toast, simple cooked grains and fruit appear on the table. The latest brunch was this delightfully satisfying and easy-to-prepare vegan omelette starring chickpea flour. I refrain from eating eggs themselves, but that doesn’t mean I can’t make something that mimics egg creations and that, in my opinion, is even more enjoyable. The texture of the omelette is very much like a real egg omelette or my favorite pudla, though a bit crispier and stuffed with ...

Quinoa Chickpea Flour Falafel with Mung Beans and Roasted Red Pepper Sauce

My regular readers will certainly know I adore small bites. Falafel is one of my favorites, and this version made with toasted chickpea flour, quinoa and mung beans is packed full of protein. They also happen to be baked instead of fried to cut down on oil. Crispy on the outside, yet moist inside, these nutty little bites served up with a creamy, sweet and tangy roasted red pepper sauce made with tahini, cashews and a bit of heat from jalapeño and spice, turns dinner into a real treat. Vegetarian Sweet Potato Wraps with Crispy Chickpeas

Wraps are always a favorite in my kitchen, and this time around I wrapped up some slightly spicy roasted sweet potatoes and chickpeas served along with a tangy tahini lemon sauce. They don’t take very long to make at all. Once the chickpeas are boiled, everything gets tossed together with aromatic spices and then popped into the oven. The sauce is easily whipped up while the vegetables and chickpeas are roasting. I admit that I didn’t make my own flat breads this time around but purchased pitas from the store instead. I would however recommend making some homemade tortillas to go along with this scrumptious mixture of goodness. It is ...
